Menguante means “descending moon”. Pablo’s biodynamic vineyard does everything in harmony with nature. Wine is decanted from the barrels at night when the moon is waning because the gravitational force of the growing moon pulls the sediment from the bottom of the barrel. The wine is perfect as an aperitif or in the company of salads, fish and white meat.
