Menguante means “descending moon”. Pablo’s biodynamic vineyard does everything in harmony with nature. The wine is decanted from the barrels at night when the moon is waning, as the gravitational force of the growing moon pulls the sediment from the bottom of the barrel. The wine goes perfectly with fish, salads and pasta.
