Pét-nat is an abbreviation of pétillant-naturel (“natural sparkling”) and denotes the wines vinified in old method. This means that there is no second fermentation and the wine is bottled before the primary fermentation is complete, without adding yeast or sugar or removing the yeast sediment. The effect of these treatments is sparkling wine with a cloudy color, with a large amount of sediment at the bottom, most often closed with an ordinary bottle cap.
